Pizza take Two

We're getting close folks.

As I've said before, Friday is ALWAYS family pizza night.  This takes on an entirely new meaning  when you are trying to stick to a gluten and dairy free plan.

Last week's experiment did not go as well as I would have liked, but as the old saying goes, if at first you don't succeed, try, try again.

That's just what I did.
First,was a trip to Whole Foods to stock my pantry with ALL the goodies needed for a gluten/dairy free kitchen.

Two hours and TOO many $$ later, and we were in business.

I was absolutely amazed with the results.  It was really good!

This recipe makes 1 large or 2 medium pizzas
 pre-heating the pizza stone produces a better quality crust, I left the stone in for about 10/15 minutes at 400

1 cup white rice flour
1 cup brown rice flour
1 cup tapioca flour
1 package yeast
2 tsp xanthan gum
dash of sugar and salt
olive oil
1 cup warm water

Sprinkle the yeast over 1/3 cup warm water(add a dash of sugar)
Add flour,xanthan gum, salt, olive oil, and water
knead until you have a smooth ball of dough ( I use the dough hook of my stand mixer)
Cover and let rise

Roll into desired size and shape
top ( I used Daiya Mozza shreds, and it was delicious)
bake 18 - 20 minutes at 400 degrees

I'm probably not done experimenting with pizza recipes, but I was pleasantly surprised this week.

Pizza


Well, my first attempt at pizza was not a HUGE success, but it wasn't a total flop either. Everyone ate it, Charlie even thought it was "Great Mom", but Stella was a bit  less enthusiastic.

Since Friday is always family pizza night, and believe me, Charlie reminds me FIRST thing Friday morning, I will keep searching.  I know it can be done. I'm on a serious mission people.

FYI...the gluten free brownies made up for the  less than great pizza

Day 1

After a quick trip to the grocery store, we  are stocked and ready to go.

Made Pancakes for breakfast, and they passed the kid test ...(we even had a guest for breakfast today)
I'm a bit experimental when it comes to cooking, so my recipes are not exact, but here is how I made breakfast today:

1 cup oat flour (Bobs Red Mill Gluten Free Oats, ground up)
1/4 cup flax
1/4 cup Amaranth Flour
1/4 cup Almond Meal
1 - 2 Tbsp raw sugar
1 egg
1-2 Tbsp oil ( I use olive oil)
2 tsp Baking Powder
dash salt
dash cinnamon
about 1 cup Almond Milk (or Soy)

They were REALLY good!

Hopefully {pizza night} goes as well

The last supper

Okay, that may be a bit dramatic, but I'm about to do the unthinkable...give up wheat and dairy. TOMORROW

Trendy...yes, but possibly the answer to my  battle with eczema.
It feels more like a war! 

I've tried just about everything.  Gave up sweet smelling lotions for oatmeal and aloe, got rid of EVERY chemical  in the house, and even started making my own bath and cleaning products. Nothing seems to work.  Sure it gets better with steroid creams, but who wants to use those everyday for the rest of your like.  Not ME!

So here I am, about to give up two of my favorite things, bread and cheese.

I'm not an out-of-the-box kind of girl, never have been, and will not start now, so this is really going to be an experiment.  But, I am determined to become the boss of my skin, once and for all.

It may not work for me, but I am committing to 6 months with NO gluten, and NO dairy. 

This is not going to be pretty!
